Fermented foods have been generating buzz for a few years now.
“Probiotics are not just found in fermented dairy products such as yogurt and cottage cheese. Probiotic bacteria are being discovered in fermented plant products such as kimchi,” said Schofield.
“Juices containing probiotic bacteria from fermented kimchi have launched in the US. Yet probiotics aren’t just bacteria - yeasts can be probiotics too! Yeasts are used to ferment dairy drinks such as Kombucha tea and Kefir. We are seeing a new wave of probiotic products that contain live yeast cultures that are the probiotic ingredient.”
She cited the launch of fermented vegetable juices Gut Shot from US company Farmhouse Culture.
