But as lion’s mane, cordyceps, chaga, reishi, and other mushroom ingredients move further into the mainstream, the industry faces a more technical challenge: how can brands verify what is actually in the products they are bringing to market?

Why AOAC INTERNATIONAL matters for functional mushrooms
AOAC INTERNATIONAL is a global, not-for-profit standards developing organization that brings together government, industry, academia, laboratories, and developers to establish and validate consensus-based analytical methods. For functional mushrooms, that kind of collaborative scientific infrastructure is no longer optional. It is becoming essential.
The category is growing quickly, but the analytical framework behind it has not always kept pace. Many mushroom products are still marketed primarily by species name, even though a name on a label does not always confirm the identity, composition, or quality of the material inside. The industry still relies heavily on beta-glucans as a primary quality marker, which can be useful but incomplete.
Fruiting body and mycelium are often discussed interchangeably, despite meaningful differences in composition. Secondary metabolites and other active marker compounds remain under-characterized across many species. And as demand rises, so does the risk of adulteration, substitution, dilution, or materials that are not fit for purpose.
That risk is especially urgent for lion’s mane. As one of the most recognized functional mushrooms in the market, lion’s mane has become a leading ingredient in products positioned for focus, cognition, mood, and everyday performance.
Popularity brings opportunity, but it also increases exposure. The more commercially valuable an ingredient becomes, the greater the need for analytical tools that can verify identity, characterize active compounds, and help brands protect themselves from quality failures or adulterated supply chains.
This is where AOAC INTERNATIONAL plays a critical role. By convening scientific experts across the industry, AOAC provides a forum for developing the methods and shared technical expectations that help complex categories mature. For functional mushrooms, that means moving beyond broad ingredient claims and toward more consistent, reproducible, and transparent practices for evaluating identity, purity, composition, and product quality.
From 29 August to 2 September, 2026, AOAC INTERNATIONAL will host its 140th Annual Meeting & Exposition in Indianapolis, bringing together the analytical science community to address the methods, standards, and quality challenges shaping food safety, agricultural products, dietary supplements, and public health. There, Applied Food Sciences (AFS) will help lead the scientific conversation on functional mushroom quality.
Raising the standards for functional mushrooms
On Monday, 31 August, 2026, Applied Food Sciences Chief Science Officer, Christine Fields, will chair the technical session, “Bridging the Analytical Gap: Advanced Methods for the Identification and Quantification of Actives in the Evolving Functional Mushroom Market.”
The session will bring together third party analytical experts from CAMAG Scientific, Neogen, and Purity-IQ to address some of the most urgent testing challenges facing the mushroom market, including species identity, active compound quantification, beta-glucan measurement, and adulteration detection.
“Our goal is to help the functional mushroom category scale with stronger science, better analytical tools, and more defensible quality systems,” explains Fields.
“Over the last eight years, we have been investing heavily in research on human clinical efficacy and method development to support the next generation of mushroom ingredients. We are grateful to AOAC for providing us with a trusted platform to present our latest data and analytical methods. This session will be an important stepping stone for the entire mushroom supply chain, and we hope these scientific benchmarks can be leveraged well beyond our select work with prominent functional fungi.”
AFS recently published a research paper on lion’s mane in Molecules titled: Simultaneous UHPLC-UV Determination of Hericenones, Hericenes, Erinacines and Ergosterol in Hericium erinaceus Raw Materials or Products.1 The method and associated clinical research lay a foundation for firmly linking these targeted active compounds in lion’s mane directly to product efficacy.
Beyond lion’s mane and cognitive health, AFS is utilizing similar scientific benchmarks to build reliable data around other well-known functional fungi, such as cordyceps, chaga, and reishi. A current clinical study is underway on AFS MycoThrive™ Cordyceps, measuring its effect on workout energy and exercise output.
The study comes on the heels of a recently published clinical proof-of-concept trial evaluating AFS’s MycoThrive™ Chaga extract and its ability to enhance mitochondrial function, which can promote longevity.
Supporting brands and formulators
For brands and formulators, the takeaway is clear. A mushroom ingredient strategy should not rely on a single claim, a single test, or a single marker. As the category matures, quality programs will increasingly need a layered analytical approach that can support identity, composition, active characterization, and finished-product confidence.
That work is especially relevant in lion’s mane, where consumer awareness is high, and the technical complexity is significant. As researchers continue to explore the role of lion’s mane compounds such as hericenones, hericenes, erinacines, and ergosterol, validated and routine-ready analytical tools will be essential for connecting ingredient identity, product consistency, efficacy, and scientific credibility.
The broader mushroom category is at a defining point. Consumer demand is already here. Product innovation is accelerating. Now the analytical infrastructure must continue to evolve so that the category can scale responsibly.
